West
Indian Creole cookery reflects the best of the
Caribbean. The mingling of cultures—the
indigenous inhabitants, African slaves, European
colonizers, East Indian and Asian migrant
workers--created real cuisines. Unlike
modern fusion-cuisine, these hybrid cuisines evolved
organically over time resulting in the tried-and-true
flavors enjoyed for generations. Sweet Plantains
celebrates this creolized blending with a tasty mix of
regional styles of cooking from the old foodways.

We don't
need those common luxury foodstuffs—truffles, foie gras, ancient old balsamic vinegar, etc.—Chef Rose
uses her brilliant “taste memory” coupled with best of
class technique and fresh all natural ingredients to
recreate luxurious West Indian flavors. My mother calls
this talent “pot magic & elbow grease." From
Indo-Caribbean hand-blended masala curries, to Latin
sofrito infused salsas, aromatic adobo marinades, Cuban
inspired peccadillo and old fashion slow cooking
stewpots to bring out flavors. We (husband and wife
team Prince and Chef Rose Adams) artfully tweaked
heirloom comfort foods and made them anew. . .

took centuries of fighting and lovemaking and the

three of these unique styles. On Wednesday & Thursday
are Latin Caribbean specialties; Friday and Saturday are
Indo-Caribbean curries and French Caribbean delicacies
are served on Sunday and Monday. Come in and experience
