Latin Cooking From The Heart  

Ropa Vieja is Spanish for “old clothes;”  A labor of love dish, made with skill, patients and passion for good eats.  This dish originates from Cuba, but is made in Puerto Rico and as far as the Canary Islands.         

 Latin American Food Traditions.

This dish has strong African and Spanish influences.  Ropa Vieja can be made from pork, chicken, duck, or beef.  We use a top quality flank cut for our version because it’s beefier tasting and juicer than other cuts. Pork shoulder is another smart cut to use. The story behind this dish is a bit of a tearjerker, about a poor farmer who had no money or food to feed his family. He literally took the shirt off of his back and gather whatever food scraps and spices he could find and cooked them with love and his tears.  The outcome was a soul-satisfying stew that still lives on today.  

Although our Ropa Vieja dosent contain old clothes, chef Rose cooks it with the same love and passion that the poor farmer used.
