Early on in our lives we had the good fortune of being exposed to a world of Caribbean culinary traditions. Learning about different Latin, East and West Indian kitchen pantries we discovered a wealth of information—most of which are not taught in culinary schools.  This   includes authentic ingredients, key flavoring agents, essential tools, and age-old technique.    The idea  for Sweet  Plantains New World Cuisine is that of our first restaurant Sweet Plantains:  to showcase the unique flavors   of  our  universe  and  also  help  to  foster  a  greater   appreciation   for  the  people,  cooks,  and

Caribbean lifestyles.

The Brooklyn New York natives have lived on beautiful St. John, United States Virgin  Islands, since 2001.  Prior to moving to St. John, owner-chef Rose Adams worked for two Rockefeller owned resorts, the exclusive Little Dix Bay on Virgin Gorda, British West Indies, and Caneel Bay, a Rosewood-managed resort in St. John, United States Virgin Islands.    After graduating from the New York Restaurant School in New York City, Rose headed-

up the catering program for Gourmet Garage, one of the first gourmet food operations in New York City with five locations.  Catering clients include the Guggenheim Museum, National Public Radio (NPR), and the Rockefellers to mention a few. Prince Adams, co-owner operator of Sweet Plantains and West Indian food connoisseur, has a diverse background which includes finance, marketing and hospitality management.  He considers himself a “Life long student of New World cuisine,” and says that: 



“There is a wealth of knowledge hidden within the minds of traditional home cooks.  This knowledge needs to be documented, since precious recipes with authentic ingredients and traditional cooking techniques are fleeting, as newer generations substitute, alter, and ignore tradition.”
